Hello Lovelies:

The weather has been so kind to us lately in my neck of the woods… I’ve had the AMAZING opportunity to unzip my jacket during my walks (it’s the little things in life) and I have been loving it! We are expecting another cold snap, and I’m certain that a snowstorm or two will find us, but all this warmth has left me with a craving for warmer weather. And while I can’t make the seasons change any faster, I can certainly pretend with a tropically themed pineapple smoothie! I’m sipping this on a beach in my imagination… care to join me?

Pineapples are pretty amazing! One cup of this delicious fruit gives you 105% of your daily Vitamin C. This water soluble vitamin is incredibly important. It helps to support the health of our brains, provides our bodies with antioxidant protection and immune support. Vitamin C is also critical for collagen product, a protein that plays a role in maintaining the structure of our bones and skin (kind of a big deal) (source).

On top of all of that delicious vitamin C, we also get to load up on Manganese (77% of your daily value per cup). Manganese helps to protect your skin integrity, plays a role in bone production and aids in controlling your blood sugar (source).

Pineapple may potentially provide us with anti-inflammatory benefits, support healthy digestion and help with energy production. You honestly can’t lose!

And dude, who doesn’t feel a little touch of tropical goodness when they enjoy a pineapple? Or is that just me, hanging out on my imaginary beach, sipping on my pineapple smoothie?

Ingredients

1 Cup Coconut Milk (Or Non-Dairy Milk of Choice)

1.5 Cups Pineapple, Chopped

1 Tsp Powdered Turmeric

1 Tbsp Coconut Oil

1 Tbsp Maple Syrup (or to Taste)

1 Frozen Banana

Instructions

Toss these babies into your blender and blend until smooth. You can adjust the sweetness by adding a bit more maple syrup if you wish or create a thicker consistency with an extra frozen banana. Top your drink with oranges, extra pineapple and/or shredded coconut, because they definitely add to the flavour (and the tropical vibe, let’s be honest xD)
