The sweltering heat of summer has found us in Atlantic Canada. And I don’t know about you, but I personally like to find ways to cool down with healthy, delicious foods! My typical go to is nicecream… I mean, it’s dessert, it’s healthy goodness, it’s filling… it also makes a fantastic breakfast, and I think anytime you can make dessert for breakfast and still support that wonderful body of yours you need to take advantage! Here are three of my go to nicecream recipes! Trust me, you’ll love these easy treats!

What the Heck is Nicecream?

If you’ve never heard of nicecream before it’s basically a homemade soft-serve – but instead of a bunch of dairy, processed sugar and a ton of grossness, nicecream is the combination of frozen bananas blended with… really, anything your heart desires. It’s an incredibly versatile snack. And if you aren’t a fan of bananas, there’s good news! Something magical happens when you freeze these guys; nicecream typically lacks a strong banana flavour. How? I have no idea. Healthy foodie magic?

With so many wonderful nicecream recipes currently being buried in my Instagram feed I decided to do a recipe round up!

Plus, I added an exclusive recipe that I have yet to share. I want you to cool off in Health-Esteem style and enjoy the marvelous deliciousness of nicecream. What’s the best part? It’s so easy! And once you’ve got the hang of it you can get incredibly creative and make some fantastic flavour combos!

So, without further ado, here are some of my favourite nicecream recipes to cool off with.

These recipes are Vegan and Gluten Free. Serves 2.

Strawberry Nicecream

Strawberry Nicecream Recipe - Vegan, Gluten Free, Dairy Free, Refined Sugar Free. Great for Dessert or Breakfast, the perfect summer dish.

Simply blend the following goodness in your food processor:

2 Frozen Bananas

1 Cup of Strawberries, tops removed

2 Tbsp of Maple Syrup

1 Tsp of Vanilla Extract or the scrapings of 1 Vanilla Bean

2 Generous Pinches of Cinnamon

Top with:

Banana and Strawberry Slices and a Tbsp of Chia.

Apple Almond Butter Nicecream with Maple Almond Sauce

Apple Almond Butter Nicecream with Maple Almond Sauce - Vegan, Gluten Free, Dairy Free, Refined Sugar Free. Great for Dessert or Breakfast, the perfect summer dish

Blend the following goodies in your food processor:

2 Frozen Bananas

1 Golden Delicious Apple

4 Tbsp Almond Butter

2 Tbsp Maple Syrup

Top with:

Cacao Nibs and Goji Berries.

Add to the deliciousness with a Maple Almond Sauce by melting equal parts almond butter and maple syrup (I did 2 Tbsps of each) and drizzling them on top.

Very Berry Nicecream with Chocolate Sauce

Very Berry Nicecream with Chocolate Sauce - Vegan, Gluten Free, Dairy Free, Refined Sugar Free. Great for Dessert or Breakfast, the perfect summer dish.

You know the drill – toss these in your food processor and combine until well mixed.

2 Frozen Bananas
1 Cup Frozen Mixed Berries (I used Dark Sweet Cherries, Blueberries and Blackberries)
½ Cup Hemp Milk (or non-dairy milk of choice)
2 Tbsp Maple Syrup

You can enjoy it as is or create an awesome chocolate sauce:

1 Tbsp of Cacao Powder

A Heaping Tbsp Coconut Oil

1 Tbsp of Maple Syrup

Melt the oil over low heat. Remove from the stove and add in the cacao and maple syrup. Drizzle over your nicecream. The coconut oil in the sauce will cause it to harden again once it means your cold nicecream dish! I love the extra crunch of the dark chocolate.

You can also garnish with your favourite fruits. I added extra berries, banana slices and chia seeds.
