Did you know that you can eat carrot tops? That those lovely green things that you rarely even see attached to your carrots by the time they make it to your home are edible?! I totally didn’t! And I’m bonkers excited about it! So I obviously had to make a carrot top pesto!
Give carrot tops a chance and treat yourself to this carrot top pesto too:
I’ll admit – carrot tops are not a foreign green in my home. We load up on them at the market weekly, and have been for years! But it’s not for us; it’s for our cute little bun, Puck. Our favourite organic farmers let us take tons of this stuff free of charge because no one eats it!
Carrot tops might as well be marked as compost – that’s where most of them are going.
But what a shame!
As soon as I found out that carrot tops could be devoured, curiosity got its tempting little paws on me and I caved! The moment I saw a lovely bundle of organic carrots with the greens still attached I jumped on them.
I will stress that, since carrot tops are not typically eaten, you may want to get these at a farmers market where you can speak with the farmer and make sure that your greens are safe to eat. Conventional carrot tops are normally pretty pesticide-laden since they aren’t typically going to make it to our plates!
But with organic, local, foodie-approved carrots in hand I was able to make my carrot top recipe dreams come true! And they were DIVINE! You should join me with this lovely Carrot Top Pesto!
Carrot Top Pesto
This recipe is Raw, Vegan, Dairy and Gluten Free.
Ingredients
¾ Cup Carrot Tops (greens from 1 bundle of carrots)
2 Tbsp Coconut Flour
3 Lg Fresh Basil Leaves (Approximately 2 Tbsps when chopped)
¼ Cup Nutritional Yeast
1 Clove Garlic
Juice ½ a Lemon
1/3 Cup Olive Oil
Instructions
Toss all of the ingredients in a food processor and blend until well mixed (whatever your desired consistency may be). Enjoy immediately or keep sealed in a container in the fridge for a couple of days.
This makes a fantastic pasta sauce or dip. I personally LOVE it mixed with some baked potatoes.
Definitely a must try! This was incredibly delicious! And while my bunny would pout if he could, my family will now be adding Carrot Tops to our list of kitchen must haves.
