But if you have any dietary restrictions, it can sometimes be a bit of a bummer. Gluten and dairy seem to run wild… everything looks so delicious. But your tummy just can’t handle it.
Don’t worry! It doesn’t have to be that way. You can absolutely remake your favourite recipes with your dietary restrictions in mind.
Because you shouldn’t have to miss out on Holiday foods just because you have allergies, intolerances or autoimmunity.
Which is why you and I will be making this awesome vegan, gluten free sugar cookie recipe! Because no one should miss out on the nom. And I’ll show you the perfect gluten free flour blend that will work wonders in all of your other recipes too!

The Perfect Gluten Free Flour Blend
Since my break up with gluten (thank you autoimmunity) I’ve tried so many different gluten free flours! And, while they shine bright with some recipes, they often leave me wanting with others. Finding something multifaceted that works with pretty well everything seems impossible! Tell me you feel me?!
Even worse, they don’t tend to convert. You can’t typically sub in 1 cup of gluten free flour for the usual 1 cup of wheat flour. It’s led to a lot of Nailed It! worthy flops in my kitchen. If Nicole Byer ever decides to do a gluten free, plant-based episode I hope she calls me. I want in on this!
The sad truth is, if you need to be gluten free, finding the right flour blend can be a real struggle.
When Namaste Foods asked me to try out their Perfect Flour Blend I was really excited to give it a go. But, also, worried that it would work like all of the other gluten free flour blends I’ve tried. Hitting a home run in one recipe and completely flopping with another.
I’ve been pleasantly surprised.
So far this blend has rocked it in soups and sauces, made delicious banana bread, created rocking pancakes and more.

The best part, you can actually sub this flour in for wheat flour without converting the recipe at all! Cup per cup. Eeeee!
I decided I wanted to really push this flour to it’s limits and make something more complicated (and Christmassy). Sugar cookies baby!
And yea, it was perfect in this recipe too. I’m pretty confident they chose the right name. So much so that I’ve already ordered myself another bag! The Perfect Flour Blend really is the perfect gluten free flour.
Gluten Free Sugar Cookie Recipe
Why sugar cookies? My mother in-law makes beautiful Christmas cut-out sugar cookies and I absolutely adore them. But I couldn’t indulge anymore after I had to remove gluten from my diet. And I know I’m not the only one who’s been there!
When Adrien and I go married she lovingly worked on making a gluten free version for our wedding. They were amazing! It’s an incredible recipe that we’ve continued to work with.
They’ve since turned into maple sugar cookies, because maple is my Canadian life blood and my go-to sweetener of choice. I promise, you will not regret the switch! It’s nom town!
And, if you have dietary restrictions, you’re likely in luck! This recipe is vegan, dairy free, gluten free, peanut free and egg free (thanks to Namaste Foods Egg Replacer).
But I promise you they’re definitely not flavour free. I dare say they’re de-freaking-licious.
Here’s how you can make your own gluten free sugar cookies:

Gluten Free Sugar Cookie Recipe
A Gluten Free, Vegan Recipe for Christmas Cut-Out Sugar Cookies
Ingredients
Dry Ingredients
- 2 Cups Gluten Free Flour Blend Like Namaste Foods Organic Perfect Flour Blend
- 1/4 Tsp Himalayan Pink Salt
Wet Ingredients
- 2/3 Cup Coconut Oil
- 3/4 Cup Maple Syrup
- 1 Egg Replacer Like Namaste Foods Gluten Free Egg Replacer
- 4 Tbsps Almond Milk Coconut Milk Works Too
- 1 Tsp Vanilla Extract
Instructions

In a large mixing bowl, use a hand mixer to cream the maple syrup and coconut oil. Use medium speed and stop once you have a thick paste.

Prep the egg repalcer and add to the mix. Blend once more until well combined.

Add the dry ingredients and continue to blend on medium speed. The dough will appear dry.

Add the vanilla extract and almond milk. Mix until you have a nice dough (this will take a minute or two).

Lightly flour a large cutting board or work space. Divide the dough in half and pat into rounds on said workspace.

Place in Tupperware/covered container and refrigerate the dough for 30 minutes.

Preheat the oven to 350 F and line a large cookie sheet with parchment paper.

Lightly flour your workspace again if needed and roll out one of the dough rounds. You want your dough to be roughly 1/4 to 1/2 inch thick.

Use cookies cuters to cut your dough into fun shapes and pop them onto the cookie sheet.

Bake until the edges begin to brown. Timing may vary depending on your oven and the shapes you choose. I recommend 9 to 12 minutes. Keep an eye so they don't burn.

Keep going until all of your cookies are made. Depending on the shapes you chose you may end up with a different amount of cookies.

These gluten free sugar cookies are truly so good! And incredibly fun to make. Who doesn’t love playing with cookies cutters?!
You can absolutely enjoy them as is. But frosting is a delicious add on if you’re feeling it.
Personally, I enjoy a simple maple butter on top. Told you I love maple!

But an icing sugar glaze works well too. Try:
1 Cup Icing Sugar
3 TBSP Coconut Milk
1/4 TSP Vanilla Extract
Mix and frost. Yum town!
Remember – it’s ok to enjoy dessert! A balanced healthy diet absolutely has room for something sweet.
