French fries are a classic for a reason! They pair well with so many things. I swear, fries can be foodie friends with almost anything! They’re well loved by many and totally adaptable. And, my favourite, they’re easy to share (whilst still getting your fill ^^). But, unfortunately, they’re often deep fried, greasy, fast food nightmares… I swore that kind of junk off many moons ago.
But dude, you can have your French fries and eat them too! This foodie classic doesn’t need to be bastardized into a questionable, unhealthy junk food. And you don’t even have to fry them if you want them to be crispy. Healthy, delicious and easy are my ideas of heaven. So I made it my mission to come up with healthy, delicious fries stat!
These Rosemary Dill French Fries are crispy, baked goodies, and I swear they are as delicious as their fried counterparts. Minimal effort, minimal ingredients and healthy coconut oil. Booyah!
Crispy Baked Rosemary Dill French Fries
Ingredients
4 Medium Sized Yellow Potatoes (or Preferred Potato Type)
2 Tsps of Dried Rosemary
2 Tsps of Dill
1 Tsp of Oregano
2 Pinches of Himalayan Pink Salt or to Taste
1/4 Cup of Melted Coconut Oil
Instructions
Preheat the oven to 350°F.
Chop your potatoes into matchsticks.
Place the chopped potatoes into a large bowl. Add the melted coconut oil, herbs and spices and mix well, until the fries are well covered.
Arrange the fries into a single layer on a large baking pan. Make sure they aren’t touching too much so that they can cook evenly and get crispy.
Bake for 30-40 minutes, until desired crispiness is achieved. Be sure to flip them at least once or twice so that they bake evenly.
When they’re ready to rock and roll, remove from heat and let cool. Enjoy with organic ketchup and pair with burgers, sandwiches, soups (might I suggest butternut squash or carrot), or enjoy solo.
If you want extra flavour, you can toss your cooked fries with more rosemary and dill. Add an extra pinch of Himalayan pink salt if you’d like. And enjoy!
