It’s hard to pick a favourite food, but give me peanut butter banana chocolate anything and I’m pretty freaking happy. It’s basically healthy meets dessert, and I don’t know about you but I’m pretty sure that’s foodie heaven!

At this point in my life, I really wouldn’t be surprised if I turned into a weird chocolate peanut butter banana person. I mean, you are what you eat right? And I eat tons of all three. If the day ever comes, I welcome it with open arms… just please don’t eat me…

These Wraps are the Bomb!

By now it’s no surprise that I adore bananas. This isn’t even the first time that chocolate and bananas have hung out together on Ms. Health-Esteem in delicious gloriousness (check out these yummy Chocolate Covered Banana Pops if you need a little more banana goodness). But this is the first time that we’ve got chocolate, peanut butter banana wraps fried up to perfection in rice paper wraps. Are you just as excited as I am?

These glorious goodies were actually a part of my up coming free healthy dessert e-book (make sure to sign up here so you don’t miss out. You’ll also get a free self care planner – score!) But they didn’t seem to fit in, since they’re the only goodies that you have to cook!

So instead of having them be the odd man out, I knew they deserved to stand proudly on their own. This means they get to hang out in your adorable tummy sooner! I’m stoked!

What’s in it for you?

These yummy delights feature three main ingredients. Homemade chocolate meets peanut butter banana goodness to become a trifecta of yum! But what’s truly in it for you?

Banana’s are a healthy superstar.

These wonderful fruits are full of vitamin B6, manganese, vitamin C, potassium, fiber, copper and biotin. The potassium provides your wonderful heart with some extra love, keeping your blood pressure regulated. And it might even protect you from atherosclerosis (the hardening and narrowing of your arteries). Booyah!

Of course, your digestive tract gets in on the action too. The prebiotics found in bananas help to keep your gorgeous gut microbiome happy and healthy after all. Not bad for a humble little banana, eh?

Chocolate is way more awesome than we think.

Forget about that nutritionally impotent, overly processed insult to real chocolate that you see while you’re waiting in line at the grocery store. Raw cacao is a nutrient packed health food super star. And it’s so easy to use it to make your own chocolate!

Cacao is a wonderful source of magnesium, vitamin C, antioxidants, iron and fiber. All that magnesium helps your body absorb calcium, is imperative for muscle and nerve function, maintains a healthy heart, supports your immune system, promotes healthy blood sugar and blood pressure levels, and so much more.

Add in wonderful iron and we have something pretty wonderful! This essential mineral helps transport oxygen throughout the body. Kind of a big deal!

And hey! We’re also keeping it up with the heart and digestive support; cacao is happy to lend you a hand in the fiber department.

Of Course, Peanut Butter is happy to join the healthy food squad too!

But only if you buy straight up, pure peanut butter. I’m talking peanuts only. There are so many brands out there that add ingredients like icing sugar, hydrogenated vegetable oils, corn syrup, soy and so much more, which is such a shame… because you basically end up with sugary frosting instead of healthy peanut butter goodness.

When you get yourself a jar of that pure, wonderfully delish peanut butter you’re feeding that gorgeous body of yours tons of copper, manganese, vitamin B3, molybdenum, folate, biotin, phosphorus, vitamin E and B1. Not to mention, we’ve got protein and healthy monounsaturated fats all stuffed in there too! (source)

Peanuts help to promote heart health. Thanks to those healthy fats and some pretty wonderful antioxidants, peanuts help to lower the risk of cardiovascular disease.

And while more studies are needed, resveratrol, a flavonoid found in peanuts, might also help to prevent the risk of stroke! (source)

Chocolate Peanut Butter Banana Rice Wraps

Ingredients

  • 2 Bananas
  • 2 Heaping Tbsps Coconut Oil
  • 1.5 Tbsps Cacao Powder
  • 1.5 Tbsps Maple Syrup
  • 4 Tbsps Peanut Butter (or Nut Butter of Choice)
  • 4 Sheets of Rice Paper
  • Optional - Cacao Nibs
  • Extra Coconut oil (For the Frying Pan)

Instructions

  1. Soak the rice paper sheets in warm water for 3 to 4 seconds, until moist.

  2. Slice each banana in half and place each half in the middle of a sheet of rice paper. Add a tablespoon of peanut butter to each sheet, right beside the banana.

  3. In a small saucepan, melt the coconut oil. Remove from heat and add the cacao powder and maple syrup. Stir until well mixed.

  4. Drizzle the chocolate sauce onto each banana and add cacao nibs if desired.

  5. Wrap the bananas in the rice paper, folding in the sides first, and then tucking down the top and bottom. 

  6. Melt the coconut oil in a frying pan, over low to medium heat. Fry the PB Banana wraps until the rice paper is crispy (approximately 3-5 minutes). Enjoy!

As if this wasn’t already enough deliciousness, you can easily make it even more awesome with coconut milk whipped cream. Trust me, it ups the ante in the most glorious way.

      We must be foodie soul mates Sophia! I eat peanut butter every damn day haha. Straight from the jar with a spoon is my idea of a good snack. I love it ^^.
