What’s sweeter than sweet potatoes? Sweet potato salad yo! I mean, seriously – there’s no better way to load up on your veggies than mixing them all up with one of nature’s sweetest tuberous root… ok, maybe the words “tuberous roots” don’t sound all that appetizing, but you and I both know that sweet potatoes beat the odds and came into this world sweet as can be.

 So let’s get our sweet potato on with one rockin’ salad! Ready to dive in?

What Makes Sweet Potatoes So Sweet

Nutritionally speaking, sweet potatoes are overflowing with goodness! Just 1 cup on these orange delights has 214% of your daily vitamin A. Wowza, right? We’ve also got 52% of your daily vitamin C and 50% of your manganese. On top of that there’s a fair amount of coper, pantothenic acid, vitamin B6, biotin, potassium, fiber, vitamin B3, B1, B2 and phosphorus. Basically, eating them is pretty well never a bad idea. But what does all that mean for you health-wise?

We’ve got tons of antioxidants in the house baby! These awesome substances protect you from free radicals and other unstable oxygen molecules that can damage your cells and alter genetic materials (source). Sweet potatoes’ superpowers don’t end there. There’s the potential that they may help to improve blood sugar regulation. Which sounds bonkers (they are a starchy, sweet veggie after all). All that fiber helps to pave the way, steadying digestion time and preventing a giant blood sugar spike. But this cool veggie may even help to improve blood sugar levels in people with type 2 Diabetes (woah, right?)

How could they possibly do that? According to this study extracts of from sweet potatoes help to control glucose levels by improving insulin sensitivity. Isn’t that amazing?! More studies are definitely needed. But we’ve got some pretty fantastic possibilities in that sweet little packaging.

Hearty Sweet Potato Salad with Maple Vinaigrette

This super simple salad and dressing combo is freaking delicious. Dive into this healthy recipe and with simple maple salad dressing. Great as an appetizer, for lunch or dinner.

Ingredients

Salad

  • 3 Med Sweet Potatoes Baked and Chopped
  • 1 Cup Chopped Dino Kale Chopped, Well Packed
  • 1 Cup Kale Chopped, Well Packed
  • 1 Cup Spinach Well Packed
  • 1 Avocado Sliced
  • 1/2 Cup Pistachios Shelled
  • 1/2 Cup Walnuts

Maple Vinaigrette

  • 1/3 Cup Olive Oil
  • 1/4 Cup Red Wine Vinegar
  • 2 Tbsp Mustard Like Simply Natural Organic Yellow Prepared Mustard
  • 2 Tbsp Maple 100% Pure Canadian
  • 1 Pinch Salt

Instructions

  1. Pre-heat the oven to 350.

  2.  Prick your sweet potatoes 3-4 time each with a fork, place on a cookie sheet and bake on the middle rack of the oven.

  3. Bake for approximately 45 minutes (until you can pierce the sweet potato with a fork easily without resistance).

  4. Let the sweet potatoes cool before you chop them into bite sized cubes.

  5. Assemble the salad: kale, spinach, sweet potatoes, avocado, pistachios and walnuts.

  6. In a blender, combine the Maple Vinaigrette ingredients and blend until smooth.

  7. Top the salad with dressing and enjoy!
