But what does all that mean for you health-wise?

We’ve got tons of antioxidants in the house baby! Sweet potatoes’ superpowers don’t end there. There’s the potential that they may help to improve blood sugar regulation. Which sounds bonkers (they are a starchy, sweet veggie after all). All that fiber helps to pave the way, steadying digestion time and preventing a giant blood sugar spike. But this cool veggie may even help to improve blood sugar levels in people with type 2 Diabetes (woah, right?)

How could they possibly do that? According to this study extracts of from sweet potatoes help to control glucose levels by improving insulin sensitivity. Isn’t that amazing?! More studies are definitely needed. But we’ve got some pretty fantastic possibilities in that sweet little packaging.

Feeling excited about that sweet potato salad yet? I hope so! Here’s the recipe gorgeous!
