Muffins with breakfast is basically the best thing ever, am I right? But you definitely want to keep it healthy and filling so you have some good fuel to help get you through the morning. And if you’re living the gluten free life like I am, finding something healthy, delicious and safe for the tummy can be pretty freaking hard.

Truth talk, I am not a morning person. I may or may not be somewhat of a sleepy zombie if I have to get up early. But I will never let that stop me from eating a healthy, filling, delicious breakfast. I just plan things out really well. I’m all about a breakfast I can make ahead of time (as I’m sure you can tell when you look at the Breakfast Section of this site).
Which is why a batch of healthy, filling muffins is pretty awesome. Make them ahead of time, keep them refrigerated and enjoy with breakfast for a few days. Total win, right?
Even better – these Gluten Free Blueberry Muffins were the result of a failed batch of pancakes. It’s pretty fun when an accident leads to something delicious!
I hate to waste food so I threw the sad pancake batter into some muffin cases and popped them into the oven. I didn’t have a lot to lose. And boy did I gain something awesome.
I tinkered around a bit until I knew I had something spectacular. I’m so excited to add these delicious muffins to the breakfast mix. And even more excited to share them with you!

These bad boys feature some pretty amazing ingredients that will totally help to fuel that gorgeous bod of yours. Let’s take a little peak at a few of the main ones, shall we?
Oats
These gluten free blueberry muffins are made lovingly with oat flour. Which is pretty fantastic, especially if you add them to your plate in the morning. Want to know why?
Oats are a wonderful source of fiber, offering 17% of your daily requirements in a quarter cup. You’ll also be enjoying 13% of your daily protein needs and tons of manganese, which helps to control your blood sugar. Basically a breakfast dream, since that helps to keep those awful energy crashes at bay.
Super bonus? Oats will keep you fuller longer. And enjoying good sources of dietary fiber like oats has also been shown to reduce the risk of high blood pressure and heart attacks, which is a total win! (source)

Bananas
Other than the deliciousness, bananas bring you vitamin B6, manganese, vitamin C, potassium, fiber, copper and biotin. The prebiotics found in bananas help to support your gut microbiome, which means your digestive system is getting some extra love too. Booyah! (source)
Speaking of love, your heart is always happy when you treat yourself to bananas, thanks to potassium. Potassium works to keep your blood pressure regulated and might even protect you from atherosclerosis (the hardening and narrowing of your arteries).
Even more awesome – this fruit also helps to prevent heart disease (thanks to their fiber content) and even lends it’s hand in cholesterol regulation (thanks to their fats). Maybe the saying should be “a banana a day keeps the doctor away?”
Blueberries
These little berries are so beautifully blue and have such a divine flavour and aroma. And there’s a reason for that! Blueberries have a unique blend of phytonutrients that lend them all of those gorgeous qualities and more. We’re talking serious antioxidant and anti-inflammatory power!
While more research is needed, studies have shown that blueberries may also have a positive impact on blood pressure, especially if yours is already elevated. And animal studies have shown that blueberries reduce the risk oxidative stress and inflammation in blood vessels (source). So there’s some promise that your cardiovacular system really appreciates it when you enjoy blueberries. Pretty neat eh?
We can add vitamin K, vitamin C, manganese, copper and fiber to the blueberry mix too, which means we’re loading up on some seriously awesome nutrients. Who knew these little berries packed such a nutritious punch?

Gluten Free Blueberry Muffins
Gluten Free Blueberry Muffins - Great with Breakfast or for Dessert! | Vegan, Gluten Free, Dairy Free, Refined Sugar Free, Healthy Recipe. These delicious muffins feature oat flour, blueberries, bananas and more. Only 8 ingredients.
Ingredients
- 1.5 Cups Gluten Free Oat Flour
- 1/2 Cup Coconut Milk Or Non-Dairy Milk of Choice
- 3 Tbsp Maple Syrup
- 1 Banana
- 1/3 Cup Blueberry Purée I use PEI Berries Pure Blueberry Purée
- 1 Tsp Vanilla Extract
- 2 Pinches Cinnamon
- 1/2 Cup Blueberries
Instructions

Pre-heat the oven to 350 F.

Add all of the ingredients to a food processor except for the blueberries. Blend until well mixed.

Add the blueberries and mix with a spoon (you want them to remain whole).

Line a muffin tray with 6 paper muffin cases.

Spoon the batter into each muffin case until full.

Bake for approximately 30 to 35 minutes until they are firm to the touch and a fork inserted into the middle comes out clean.

Allow to cool and enjoy for dessert or with breakfast.
