Hello Lovelies:
We all know what to do when life gives you lemons, but what about when life gives you carrots? You make carrot soup of course!
I had the opportunity to harvest some carrots last weekend and holy gods there were a lot! I’m all but drowning in carrots (not that that’s a bad thing). So clearly a variety of carrot infused recipes are in order.
I’m so glad for it! All these carrots mean tons of beta-carotene, which your fantastic body will convert into Vitamin A. Vitamin A is marvelous for the skin (a fact that led last weeks Health-Esteem Queen Kaye down the path of becoming the beautiful nutritionista she is today). Not only will the nutrients in this beautiful veggie support your skin, Vitamin A can also help nourish your hair, giving your strong, shiny locks and a healthy scalp. Carrots also bring vitamins B7 and K to the table (among a lot of other goodness) and offer tons of antioxidants! The fiber is great for your digestive system and, super bonus, these lovely, orange roots support your amazing cardiovascular system.

Quick and Delicious Carrot Soup
This recipe is gluten free and vegan and serves 2.
Ingredients
5 Large Carrots
2 Red Apples
1 Yellow Onion
1 Lg Clove of Garlic
A few Pinched of Salt and Pepper
1 Tbsp of Turmeric Powder or Naledo Truly Turmeric Wildcrafted Whole Root Turmeric Paste (definitely ups the yum factor!)
3 Cups of Water
Instructions
Chop all your veggies and place all of the ingredients in a pot. Turn the burner to high until the water begins to boil and then simmer over medium heat for approximately 40 min to an hour (until all of your veggies are soft). Blend with a hand blender (or carefully place the hot soup in a blender and blend).
You can enjoy your soup as is or up the ante by adding a sweet coconut milk blend!
Ingredients
1 can full fat coconut milk
1/4 Cup Maple Syrup Mix
Mix the ingredients together and warm them in a small pot. Add desired amount to your soup (I like 3 to 4 Tbsp in my bowl). Save any leftovers for yummy smoothies or butternut squash soup.
