Super Easy Honey Glazed Cake Pops

Hello Lovelies:

One of the things I love about creating new, healthy recipes is testing the prototype. I adore spending time in the kitchen with my husband, trying out ingredients and brainstorming new recipes. And, super bonus, we get to enjoy the fruit of our labour! This past week has found us giddily trying to perfect Cake Pops and testing out glazes and frostings until we knew we had a winner. And do we EVER have a winner! These drool-worthy, bite sized balls of deliciousness are in-freaking-credible! Are you down for some healthy, delicious goodness? Give these babies a try!

Cake Pops

This recipe is Dairy Free, Gluten Free and Vegetarian. Yields 6 Cake Pops

5 Heaping Tbsp Coconut Flour

2 Tbsp Lucuma (like this)

1 Tsp Vanilla Extract

2 Tsp Melted Coconut Manna or Coconut Oil

1 Organic, Local Egg

1 Tbsp Honey

Coconut oil (to grease the pan)

Pre-heat the oven to 350. Whisk all of the ingredients together in a bowl, until well blended. Grease a small cookie sheet with coconut oil. Scoop a small amount of the mixture into your hands and form a ball. Repeat until you have 6 balls, and place them evenly on the cookie sheet. Bake for 5 minutes and then let cool! These babies cook fast, so keep an eye on them.

While we wait for these goodies to cool down, let’s work on the glaze!

Honey Glaze

½ Cup Honey

¼ Cup Coconut oil

1 Cup Almond Flour

½ Tsp Vanilla Extract

Melt the coconut oil in a small saucepan over medium heat. Add the honey, almond flour and vanilla extract. Stir until well mixed and let it continue to heat until you have a nice, smooth mixture. Remove from heat and let cool.

Cover your cake pops in the honey glaze and serve warm, or refrigerate and enjoy as a nice, cool treat. The choice is yours! I added cacao nibs and cinnamon as garnish, for an extra pop of deliciousness.
