Healthy Rice Crispy Treats with less than 10 ingredients? With caramel and chocolate? Is this divine goodness even possible?

Yes my fellow sweet treat fans. Yes it is! Rice Crispy Squares needed a healthy makeover and my taste buds and I were more than happy to oblige.

Rice Crispy Treats just had a healthy chocolate, caramel, makeover. You owe it to your sweet tooth to treat yourself to these healthy, gluten free goodies.

It has been ages since I’ve enjoyed a yummy rice crispy treat. My days of playing chubby bunny and downing marshmallows and rice crispy squares like, well, candy, are far behind me. The way I see it – why should we stuff our bodies with foods that are a burden to our health, after all, when we can easily make our sweet tooth happy and support our well-being? That’s the sweet spot my friend. Healthy, delicious, no deprivation and no burden on that beautiful, biological masterpiece you’re currently occupying.

I’ve been back on the cereal train lately with Nature’s Path Organic Crispy Rice Cereal. Loving that I’m consuming nutrient dense brown rice flour, pure sugar cane, sea salt and molasses (that’s seriously it!) Caramel Rice Crispy Treats with Chocolate Frosting - Quick Easy Healthy Breakfast Cereal

I knew I had to revisit a childhood favourite and find a way to make rice crispy treats delicious and healthy! And thus, this recipe was born:

Caramel Rice Crispy Treats with Chocolate Frosting

This recipe is Vegan and Gluten Free. Creates 12 Larges Squares.

Caramel Rice Crispy Treats with Chocolate Frosting

Rice Crispy Treats

Ingredients

2/3 Cup Tahini

1/3 Tbsp Coconut Oil

2 Tsp Vanilla Extract

2 Tsp Cinnamon

1/3 Cup Maple Syrup

4 Cups Crispy Rice Cereal (keep it healthy with cereals like Nature’s Path Organic)

Instructions

In a medium sized saucepan, melt the Tahini and coconut oil over medium heat. Stir regularly and keep a close eye to avoid burning the mixture. Add the Maple Syrup, Vanilla and cinnamon and mix well.

Once the sauce is well blended, remove from heat and add the crispy rice cereal. Mix until the cereal is completely covered.

Press the rice crispy treat mixture onto a large cookie sheet (approximately 15.26 x 10.25 x 0.75 in or 38.7 x 26 x 1.91 cm). Now to start on the Chocolate Frosting.

Chocolate Frosting

Ingredients

1/4 Cup Cacao Powder

3 TBSP Maple Syrup (or to taste)

3 TBSP Coconut Oil

Instructions

Mix the 3 ingredients together until you have a frosting consistency. You can frost any way you wish! Add dollops of frosting here and there or spread evenly over the squares for a thin frosted layer. You can also warm the frosting over low heat in a small saucepan and drizzle it over the rice crispy treats.

Once you’ve had your fun frosting this dessert, place the treats into the refrigerator overnight, so that the squares can harden. Or dig in now… it’ll be messy and crumbly, but I definitely won’t judge you!

If they survive until morning you can remove them from the fridge and cut them into 12 equal sized cubes (or whatever size you wish) and enjoy!
