Luckily, hangriness is not something I experience anymore, because when it comes to healthy food, I am always prepared. And my breakfast game is THE BEST! I’ve been drooling over pictures of homemade waffles on Instagram for ages! It has been eons since I enjoyed a waffle breakfast. They kind of went to the wayside when I had to go gluten free. Many of the gluten free waffles out there either made my stomach sad or didn’t meet my ingredient standards. Still, I had hope that I would one day create a plate full of healthy, delicious waffles.
So I finally invested in a waffle maker and went to work! And I just love what we came up with…
I’m going through a buckwheat pancake phase and I am so excited to share! After finally inventing Gluten Free Buckwheat Pancakes I’m excited about (recipe here) I continued to create and I came up with these adorable, delicious Mini Buckwheat Pancakes. They’re vegetarian (with a simple switch if vegan), gluten free, paleo and refined sugar free… I know that sounds like a lot of “free” but these babies refused to be anything but delicious. So go ahead and treat yourself to these healthy, guilt-free breaky delights.

I have so many fond memories of Pancake mornings in the Flanagan house. Weekends surrounded by my parents and sisters, feasting on pancakes and maple syrup, making snappy puns (my father is the punny king) and looking forward to a couple of days of relaxation. It was a little tradition, Saturday morning Breakfast. And the pancake part is something I’ve lost out on when I had to say goodbye to gluten. I have worked tireless to invent the perfect, gluten free pancake… and failed many, many times (though I did accidentally create cake once, so partial win?) I am so incredibly excited to introduce my first Health-Esteem King. And not just because gender diversity is a fantastic thing, but because this man is my hero and he means the entire world to me. My dad, Louis Flanagan, has had an incredible Health-Esteem journey and is an inspiration to anyone wishing to make health invoking changes. His story proves that you can achieve anything if you put your mind to it.
Louis’ lifestyle revamp allowed him to kick prediabetes to the curb and get off of the high blood pressure medication that he had been taking for 10 years (and assumed he’d be taking for life). He said goodbye to his smoking habit and gave up on his penchant for bread and sweets in exchange for better health. Today he runs 3 to 5 km per day and bikes even further; he recently participated in a 126 km bike run in order to raise money and awareness for Multiple Sclerosis!
According to his doctor, it’s far more common to be placing middle aged individuals on medication, not taking them off of it. But Louis’ experiences have allowed him to do just that. It just goes to show that Health-Esteem is for everyone, regardless of your age; our dedication to our health and wellbeing can pay off in ways we never imagined!
