This super simple salad and dressing combo is freaking delicious. Dive into this healthy recipe and with simple maple salad dressing. Great as an appetizer, for lunch or dinner.
Pre-heat the oven to 350.
Prick your sweet potatoes 3-4 time each with a fork, place on a cookie sheet and bake on the middle rack of the oven.
Bake for approximately 45 minutes (until you can pierce the sweet potato with a fork easily without resistance).
Let the sweet potatoes cool before you chop them into bite sized cubes.
Assemble the salad: kale, spinach, sweet potatoes, avocado, pistachios and walnuts.
In a blender, combine the Maple Vinaigrette ingredients and blend until smooth.
Top the salad with dressing and enjoy!
