The yummiest dessert sweet potato fries you didn't know you needed | Vegan, Gluten Free, Dairy Free, Refined Sugar Free. This healthy dessert is easy to make and totally delicious.
Pre-heat the oven to 350 F.
Slice the fries into matchsticks.
Grease a large cookie sheet with coconut oil.
Spread the sweet potato fries evenly onto the cookie sheet.
Sprinkle the cinnamon on top of the fries.
Bake for 20 minutes and remove from the oven to flip the fries. Place back in the oven for another 15 to 20 minutes (until desired crispiness).
Remove from the oven and let cool while you work on the peanut butter sauce and chocolate coconut milk whipped cream.
Allow your peanut butter to soften to room temperature if it was refrigerated. You can also mix everything together and then heat it up over low heat in a small saucepan if you prefer.
In a small bowl, combine the ingredients and stir until well blended.
Drizzle on top of the sweet potatoes. You can also use it as a dip if preferred.
Scoop the solid fat out of a can of full fat coconut milk and place it in a small bowl. Save the liquid for a smoothie.
Add the cacao powder and maple syrup and mix until well blended. I prefer to use a hand blender but an egg beater works well too.
Dollop on top or use as a second dipping sauce.
Add optional toppings if desired.
