Ingredients

  • 1.5 Cups Gluten Free Oat Flour
  • 1/2 Cup Coconut Milk Or Non-Dairy Milk of Choice
  • 3 Tbsp Maple Syrup
  • 1 Banana
  • 1/3 Cup Blueberry Purée I use PEI Berries Pure Blueberry Purée
  • 1 Tsp Vanilla Extract
  • 2 Pinches Cinnamon
  • 1/2 Cup Blueberries

Instructions

  1. Pre-heat the oven to 350 F.

  2. Add all of the ingredients to a food processor except for the blueberries. Blend until well mixed.

  3. Add the blueberries and mix with a spoon (you want them to remain whole).

  4. Line a muffin tray with 6 paper muffin cases.

  5. Spoon the batter into each muffin case until full.

  6. Bake for approximately 30 to 35 minutes until they are firm to the touch and a fork inserted into the middle comes out clean.

  7. Allow to cool and enjoy for dessert or with breakfast.
