Ingredients

  • 1/2 Cup Quinoa
  • 1 1/2 Cups Coconut Milk (Or Non-Dairy Milk of Choice)
  • 1 Apple (Gala, Pink Lady, Red Delicious or Honeycrisp)
  • 1 Tsp Cinnamon
  • 2 Tbsps Maple Syrup
  • 2 Tbsps Crushed Walnuts

Instructions

  1. Core your apple and slice it into cubes.

  2. Add all of the ingredients into a medium saucepan and mix until well blended.

  3. Bring to a boil and reduce heat to low/medium.

  4. Simmer until the liquid is absorbed (approximately 15 minutes), stirring often.

  5. Remove from heat, cover and let sit for 5 minutes.

  6. Serve immediately or refrigerate and enjoy cold the next morning.
