Soak the rice paper sheets in warm water for 3 to 4 seconds, until moist.
Slice each banana in half and place each half in the middle of a sheet of rice paper. Add a tablespoon of peanut butter to each sheet, right beside the banana.
In a small saucepan, melt the coconut oil. Remove from heat and add the cacao powder and maple syrup. Stir until well mixed.
Drizzle the chocolate sauce onto each banana and add cacao nibs if desired.
Wrap the bananas in the rice paper, folding in the sides first, and then tucking down the top and bottom.
Melt the coconut oil in a frying pan, over low to medium heat. Fry the PB Banana wraps until the rice paper is crispy (approximately 3-5 minutes). Enjoy!
