But it can be incredibly hard to know where to start (especially if you’re not used to having a veggieful plate). But fear not friends! I’ve got a pretty amazing solution for you that’s deliciously wonderful and can easily be enjoyed by veggie enthusiasts and healthy foodie newbies alike – veggie noodles!

I’ve got a sweet and sour sweet potato noodles recipe here for you today! But that’s not all. I also have a pretty fantastic veggie noodle tutorial infographic for you so that you can turn other vegetables into delectably awesome noodles and create your own recipes. Sound good? Heck yes it does!

What’s The Deal With Veggie Noodles?

We aren’t talking about a regular noodle situation here. Veggie noodles aren’t really noodles. They’re made from thinly sliced, peeled, grated or spiralized vegetables. There’s nothing extra hanging out in these dishes. You’ll be enjoying 100% vegetable goodness when you make a dish like this. Which is pretty fantastic, especially if you want to up your veggie consumption (and really, we all should).

Other terms you might hear in reference to veggie noodles are zoodles, zucchini noodles, spiralized noodles, or vegetable noodles.

You can even speed things up and invest in a mandolin if you want shorter noodles faster. I actually used one to make the carrot matchsticks we’ll be using in the sweet and sour sweet potato noodles recipe you can enjoy later. I used a yellow sweet potato. But regular orange sweet potato would work wonderfully too. And you can change up the taste of the vinaigrette by using Apple Cider Vinegar or White Wine Vinegar. Both taste amazing!

Sweet And Sour Sweet Potato Noodles

Ingredients

Maple Vinaigrette (Yields Approximately 1/2 a cup)

  • 4 Tbsp Maple Syrup
  • 2 Tbsp Vinegar White Wine or Apple Cider
  • 1/2 Tsp Powdered Ginger

Sweet Potato Noodles

  • 1 Large Yellow or Orange Sweet Potato Cut Into Thin "Noodle" Matchsticks (See Tutorial Infographic)
  • 2 Large Carrots Cut Into Thin Matchsticks
  • 1 Large Clove Garlic Minced
  • 2 Tbsps Rosemary Fresh or Dried
  • 1.5 Cups Packed Spinach
  • 1.5 Cups Packed Cress
  • 2 Tsps Coconut Oil
  • 2 Pinches Himalayan Pink Salt

Instructions

Maple Vinaigrette

  1. In a small bowl, combine your vinaigrette ingredients and mix well. Set aside while you work on the sweet potato noodles.

Sweet Potato Noodles

  1. Place a large frying pan over medium heat and add the coconut oil. Let the oil melt.

  2. Once the oil has melted add the minced garlic and rosemary and let cook for about 2 minutes.

  3. Add the sweet potatoes and carrots, season with Himalayan pink salt and mix well with the oil in the pan. Let cook for 5 minutes, mixing occasionally. 

  4. Add half of the vinaigrette and mix to combine with the noodles. Let the vinaigrette fully reduce. Add more oil to the pan if needed (to avoid burning the noodles) and cover. Let cook for approximately 15 to 20 minutes, until the noodles are cooked through. Make sure to check often so that your noodles aren't overdone. 

  5. Add the spinach and cress and the rest of the vinaigrette. Once again, mix everything together and cook for another 2 minutes, until the greens are wilted.

    Looks amazingly delicious!! I have actually never tried sweet potato noodles, but I love sweet and sour! I’ve made zucchini noodles before, but I still have to find the perfect sauce to go with zucchini pasta , I will definitely check out your recipe for this!! ???

      I wish I could give you a plate! I haven’t figured out the right sauce combo for zucchini pasta either. You aren’t alone ?.
