Hello Lovelies:

Let me paint you a word picture… It’s a beautiful Sunday morning. The blankets are warm and the sunlight is slowly creeping in through the window, welcoming the beautiful new day.

You’re well rested and hungry! What do you make for breakfast on this glorious, relaxing Sunday?

If you answered waffles you and I have something in common! Because, on a quiet Sunday morning I’m all about that waffle life. (Pancakes take second place… we’ll talk about them next time ;))

Did you know that it’s super easy to make your own delicious waffles? And homemade always tastes so much better, doesn’t it? Plus, it’s more fun! Wanna make some together?

Don’t worry if you’re gluten free (I am!) This is the perfect vegan, gluten free waffle recipe stuffed with chocolate chips. I’m bonkers excited to share it with you.

Let’s dive in (preferably forks first!)

With Great Waffles Comes Great Yum-ability!

Ok, I’ve clearly been watching too many Marvel movies lately… But I do think we all deserve a few good waffles every now and again. Don’t you agree?

And it has to be just right. The Goldilocks zone of deliciousness. Perfectly crispy on the outside, with a delightful softness on the inside. Preferably drowning in maple syrup and covered in fruit… and stuffed with chocolate if we’re feeling fancy (and we totally are today!)

Coconut milk whipped cream is always a welcomed bonus too. Are you drooling too, or is that just me?

But things get a little more complicated if you’re gluten free (like yours truly).

Most recipes require this delicate mix of a million different gluten free flours. And I’m just not in the mood for complexities in the morning (or almost ever, if I’m being honest).

Nor am I usually a fan of the flavour that comes along with those all purpose gluten free flour mixes. I’m picky about my sweetness…

So creating a simple, crispy, gluten free waffle recipe was a major goal of mine from day one of my gluten free life.

Thankfully my hubby and I came up with something wonderful that ticks all of those awesome boxes. We can’t get enough of them! And, since I love sharing food with my friends, I’m excited to share the recipe with you! Check it out:

Ingredients

  • 2 Cups Oat Flour Certified gluten free if needed (I use Only Oats)
  • 2 and 1/2 Cups Coconut Milk
  • 1/4 Cup Melted Coconut Oil
  • 1/4 Cup Chocolate Chips I use Camino Semi Sweet Chocolate Chips
  • 2 Egg Replacer I use Namaste Foods. If you choose to use eggs please buy from farms that are kind to their animals <3
  • 1 Pinch Himalayan Pink Salt
  • 1/2 Tsp Cinnamon
  • 1 Tsp Vanilla Extract
  • 1 Tbsp Maple Syrup

Instructions

  1. Turn on your waffle iron and allow it to pre-heat.

  2. Melt your coconut oil in a small saucepan.

  3. Prep your egg replacer.

  4. Mix your dry ingredients in a bowl. Poor in the coconut milk and blend until well mixed. Then add the egg replacer and mix once more.

  5. Once the oil is melted, add it into the batter and mix in quickly.

  6. Poor your batter into the waffle iron, using enough to cover the centre well and close the lid. It will smooch that sucker down so it covers the rest of the surface area.

  7. Once the waffles are crispy (this should take approximately 10 to 15 minutes depending on the waffle iron), remove them from the waffle iron and let them cool. Don't stack them yet, as they'll lose their crispiness.

  8. Repeat the steps until you have 6 awesome waffles.

  9. Enjoy with maple syrup, your favourite fruit, cacao nibs, coconut milk whipped cream or whatever toppings you enjoy!

Oat Flour

You know I love to gush about the goodness food has to offer. So let’s dive in to why these waffles are oh so lovely!

These bad boys are made with oat flour. Which I absolutely adore and use a ton. This isn’t my first time gushing about how awesome they are! And I doubt it will be my last…

Here’s a little refresher on what oats have to offer:

  • 17% of your daily fiber value in just a quarter cup
  • 13% of your daily protein needs
  • Help keep you fuller longer
  • Digestive health support
  • Great source of manganese, which helps to control blood sugar, keeping those awful energy crashes at bay
  • Good source of molybdenum, phosphorus, copper. biotin, vitamin B1, chromium and zinc

Super bonus! Eating whole grains and good sources of dietary fiber, like oats, have also been shown to reduce the risk of high blood pressure and heart attacks. That’s pretty flipping great, don’t you think? (source)

Chocolate

Yes, that’s right, chocolate is full of goodness too. And it absolutely has a special place in a healthy diet. (Although, so does whatever else you like too sweet friend – it’s all about creating a happy balance).

Raw cacao (the beans used to make chocolate) is overflowing with nutritious awesomeness. It’s packed with goodies like:

  • Magnesium
  • Iron
  • Potassium
  • Calcium
  • Fiber
  • Flavanols

But what exactly does that mean for you health wise?

Let’s take a closer peek at some of the nutritional goodness chocolate has to offer…

Magnesium:

  • Helps your body absorb calcium
  • Plays a roll in muscle and nerve function
  • Aids in maintaining a healthy heart
  • Supports immune function

To add more nutritional awesomeness to the sweetness that is chocolate, that iron helps transport oxygen throughout your wonderful body and plays an important role in energy production. Plus we have fiber to stabilize your blood sugar and support your digestive health. Isn’t that fantastic? (source)

The flavanols in cacao might also help to support your heart health, protecting blood vessel linings and preventing high blood pressure (source).

But wait, there’s more!

Those sexy flavanols also have a photoprotective quality. That means that eating healthy chocolate options on the regular will help your skin protect itself from UV damage! Holy wow, that is the coolest!

But keep in mind that quality truly matters here. Those inexpensive, conventional chocolate bars you typically find by the check out at grocery stores had no effect in this department. We’re looking at semi sweet or darker varieties of chocolate. (source)

The darker the chocolate the more cacao. So darker varieties definitely have more of the goodness I listed above. But enjoying whatever type you enjoy is ok – there’s nothing wrong with treating yourself.

If you’d like some chocolate suggestions, I adore Camino! If you aren’t into dark chocolate chips, they have an awesome semi-sweet chocolate chip option (which is what I used in this recipe).

Even better – Camino supports fair trade too. Cacao farmers deserve fair wages and a safe working environment. And sadly that isn’t always the case. It’s so important we consider supporting fair trade. If you’d like to learn more I talk way more about that right here.

I hope you adore these waffles as much as my hubby and I do! They’re perfect for a quiet Sunday morning… or, really, any time you’re craving waffles. Every day can be waffle day!
