The Dessert Sweet Potato Fries You Didn’t Know You Needed

Share The Love!

Hello Lovelies:

I’m sure most of us would agree that sweet potato fries are the bomb diggity. I mean, the lovely potato is still pretty nice and all, but sweet potatoes are like their cool cousin that we all wish we met earlier. Or is that just me?

Once I discovered sweet potatoes, I was all about it. They make a common appearance on my plate. But I had never thought about them as a dessert food until sweet potato toast all but took over Instagram. All those shots of sweet potato slices covered in peanut butter had my creativity wheels spinning… What if I made chocolate coconut milk whipped cream and peanut butter sauce covered sweet potato fries?

Well, I don’t have to ask that question anymore. Because it happened and it was awesome!

Trust me, these are the Dessert Sweet Potato Fries you didn’t even know you needed. Get ready for deliciousness!

Don’t Worry, This Dessert is Healthy AF

While you may be a little concerned that the dessert aspect of this dish makes it unhealthy, I promise you it’s anything but. I wouldn’t dishonour the sweet potato by destroying it’s goodness with unhealthy ingredients. This is a dessert you can feel good about! Like every dessert should be.

We’ll be filling up on peanut butter, coconut, cacao, maple syrup, cinnamon and, of course, sweet potatoes! Sounds good eh? It’s only going to get better.

These sweet potato fries start off pretty normal…

I found what has to be the mother of all sweet potatoes (it was huge), but 2 regular sized sweet potatoes will probably do you well (you want about 5 or 6 cups of matchstick fries in the end).

These are definitely something that you’ll want to enjoy right away. And there’s tons to enjoy – you can easily treat a few friends. If you’re rocking it solo, you can half the recipe. Or simply make up a little plate and store everything separately in the fridge. It still won’t be as magical the next day, but at least it won’t be soggy if you store everything separately.

Our sweet potato fries are baked on a cookie sheet greased with coconut oil. And, to fit the dessert motif, they’re sprinkled with cinnamon. Because yum!

Next comes the peanut butter sauce.

I prefer crunchy, but you can go smooth if that’s more your style! But please stick to peanut butter that’s made out of peanuts only. Trust me, this dish will be sweet enough without all the added sugars and junk you can run into in less than desirable peanut butter brands. Let’s keep it yummy and healthy y’all.

I’m a bit of a peanut butter fiend, but if you’re a less is more kind of person you can easily half the peanut butter sauce. Personally, I was liking the bowl… and loaded up our plate. But that doesn’t mean you need to feel the same way. 😉

And feel free to experiment with other nut butters, like cashew or almond butter. They’ll be just as wonderful I’m sure (I plan to find out soon).

Generously drizzle on top or keep on the side as a dipping sauce. It’s delicious either way!

The deliciousness continues with Chocolate Coconut Milk Whipped Cream.

I spiced up my regular coconut milk whipped cream by throwing in a tablespoon of raw cacao powder. It added the perfect hint of chocolate and blended so well with the peanut butter and sweet potato flavours. Add a generous dollop on top, and/or keep on the side with the peanut butter sauce as a dipping option and you’re in yum town!

Lastly, top with cacao nibs and shredded coconut, and dive in!

Are you ready to get riggity riggity wrecked by a plate of deliciousness? Let’s do this!

Ingredients

Sweet Potato Fries

  • 2 Sweet Potatoes
  • 1 Tsp Cinnamon
  • 1 Tbsp Coconut Oil (Approximately) - To Grease the Pan

Peanut Butter Sauce

  • 1/2 Cup Peanut Butter - Room Temp
  • 1/2 Cup Coconut Milk - Or Non-Dairy Milk of Choice
  • 1 Tbsp Maple Syrup

Chocolate Coconut Milk Whipped Cream

  • 1 Can Full Fat Coconut Milk - Refrigerated Overnight
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Raw Cacao Powder

Optional Toppings

  • 1 Tbsp Raw Cacao Nibs
  • 1 Tbsp Shredded Coconut

Instructions

For the Sweet Potato Fries

  1. Pre-heat the oven to 350 F.

  2. Slice the fries into matchsticks.

  3. Grease a large cookie sheet with coconut oil.

  4. Spread the sweet potato fries evenly onto the cookie sheet.

  5. Sprinkle the cinnamon on top of the fries.

  6. Bake for 20 minutes and remove from the oven to flip the fries. Place back in the oven for another 15 to 20 minutes (until desired crispiness).

  7. Remove from the oven and let cool while you work on the peanut butter sauce and chocolate coconut milk whipped cream.

For the Peanut Butter Sauce

  1. Allow your peanut butter to soften to room temperature if it was refrigerated. You can also mix everything together and then heat it up over low heat in a small saucepan if you prefer.

  2. In a small bowl, combine the ingredients and stir until well blended.

  3. Drizzle on top of the sweet potatoes. You can also use it as a dip if preferred.

For the Chocolate Coconut Milk Whipped Cream

  1. Scoop the solid fat out of a can of full fat coconut milk and place it in a small bowl. Save the liquid for a smoothie.

  2. Add the cacao powder and maple syrup and mix until well blended. I prefer to use a hand blender but an egg beater works well too.

  3. Dollop on top or use as a second dipping sauce.

  4. Add optional toppings if desired.

Enjoy the deliciousness friends! I hope you love this as much as I do.
