Delicious, Dairy Free Deep Fried Ice Cream

Hello Lovelies:

I hope you had a Happy Mother’s Day! My mom and I always used to celebrate with a favourite – deep fried ice cream! So I’ve decided to try my hand at creating a healthy version of our beloved dessert…

It was the craziest recipe creating experience so far! But what we came up with was freaking amazing! And I think you’ll love it too!

So without further ado – healthy, dairy free deep fried ice cream awaits below <3

Don’t Worry, It’s Not Too Complicated

This is by far the craziest cooking experience I’ve ever undertaken – but once I figured out how to make it work, everything went smoothly. It’s actually very simple once you get rolling, but it is absolutely imperative that you prepare!

Do not make the same mistake as I did and forget that you need a bowl for the ice cream after it’s been fried… this ended with me yelling for my husband “Get a bowl! I forgot to get a bowl! Oh my goodness, get a bowl! Please hurry!”

I was balancing a giant ball of ice cream on a spoon, dangerously close to hot coconut oil… praying to the gods of dessert that I can save it. This yummy dish requires an assembly line, quick hands, and hungry mouths. Serve and enjoy right away!

Deep Fried Ice Cream

This recipe is Gluten Free, Dairy Free and Vegetarian. Serves 4 to 6.

For the Ice Cream

Ingredients

2 Cans of Organic Full Fat Coconut Milk

½ Cup of Maple Syrup or Honey

1 Tsp of Vanilla Extract

Instructions

Refrigerate the cans of coconut milk overnight.

Scoop out the contents of the coconut milk into a small mixing bowl.

With a hand blender (egg beaters or a blender would also work) mix the contents until they are well blended. Add the maple syrup and vanilla extract and mix well.

Poor the mixture into an ice cream maker and turn it on. It will take approximately 30 minutes for the ice cream to be ready.

Scoop into a container or pan and freeze until the ice cream holds its shape well (approximately an hour).

You’ll need to create 4 to 6 palm sized balls that hold their shape well.

But before we get to that step, let’s prepare that oh so important assembly line I was telling you about.

For the Deep Fry Adventure

Ingredients

2 Cups of Quinoa Crunchies, or Healthy Cereal of Choice

3 Heaping Tbsps. of Coconut Oil

2 Egg Whites

3 Pinches of Cinnamon

Prep Instructions

Not to overstress this, but prep prep prep! Have a bowl or plate ready for your final product (don’t suffer like I did! Haha).

Prepare the egg whites (here’s a crazy simple way to do that!), mix in the cinnamon and place them in a bowl big enough to roll your ice cream balls in.

In another bowl crunch the quinoa crunchies slightly, so you have smaller pieces to cover the ice cream with.

Lastly, melt the coconut oil in a high rim frying pan over medium heat.

Cooking Instructions

Create the one palm sized ball of ice cream deliciousness and get ready for a speedy adventure.

Roll the ball in the egg white, cinnamon mixture until well covered, and then roll it in the crunched Quinoa Crunchies, smothering the ball in cereal.

Lastly, pop it in the frying pan and roll it around with a spoon, making sure each side has a moment in the hot oil.

You should fry the ball for 10 to 15 seconds; we do not want this goodie melting before we have the chance to enjoy it.

Pop onto that plate that you most definitely didn’t forget to have ready (you’re welcome) and move onto creating the next ball.

Lather, rinse and repeat until you’ve created them all!

Sounds amazing right? But we can make it better! Remember how I told you about how nature made sweet, healthy, delicious caramel called Lucuma? I couldn’t create a treat like this for my mom and forget the sauce! It’s the cherry on top of this divine goodie.

Lucuma Sauce

Ingredients

2 Tablespoons of Lucuma (like this)

2 Tablespoons of Coconut Oil

1 Tablespoon of Maple Syrup

Instructions

Mix everything together in a small sauce pan and melt over low heat.

Pour over the deep fried ice cream and garnish with your favourite fruits. I added banana, kiwis and raspberries!
