The first time I heard the word ‘hangry’ (hungry angry) it totally resonated with me. Why? Because this girl can get seriously hangry if she allows herself to. Imagine me back in my early Graves Disease days, when no amount of food could satisfy my hunger! Hangry city! Luckily, hangriness is not something I experience anymore, because when it comes to healthy food, I am always prepared. And my breakfast game is THE BEST! I’ve learned how to make breakfast work for my busy schedule – and you should too. Which is why you seriously need to try this delicious blueberry overnight oats recipe. It practically makes itself! Why You Gotta Have Good Breakfast Game

I know you’re probably tired of hearing this, but breakfast is seriously the most important meal of the day! You have been fasting for HOURS and you need energy for all the things ahead of you.

If you want to avoid prolonged tiredness, irritation (hello Mr. Hangry), sugar cravings (your body begging you for energy) and all the other downsides of a hungry morning, eat a good breaky! And I am not talking about that sugary cereal junk we like to think of as “part of a balanced breakfast”.

What Makes a Balanced Breakfast

According to Dr. David S. Ludwig, a nutrition expert at a the Harvard-affiliated Boston Children’s Hospital, a healthy breakfast should include some carbs with fiber, protein and healthy fats (source).

Enter oats. Oats are a great source of fiber, offering 17% of your daily value in a quarter cup. On top of that, you’ll also be enjoying 13% of your daily protein needs. Add in tons of manganese, which helps to control your blood sugar, keeping those awful energy crashes at bay.

Oats help to keep you fuller longer. And eating whole grains and good sources of dietary fiber has also been shown to reduce the risk of high blood pressure and heart attacks, which is a total win!

Since we want some good fats in there, our overnight oats are overflowing with healthy fat heavy coconut milk. This breakfast rocks!

I know many of us are in a super hurry in the morning and may not have time to sit down to or even prepare a healthy breakfast. And I know some of us need to be awake for a bit before we can even consider eating something… which is another reason overnight oats rock the kasbah.

Trust me – get on the train with these Blueberry Overnight Oats and your schedule and body will thank you.

Why Overnight Oats Rock

Much like the name implies, we make this awesomeness overnight my friend. And it only takes about 5 minutes! Throw everything together, give it a stir and pop them in the fridge while you sleep. Let time do the work for you and wake up to breakfast! Ready to rock and roll!

Pro Tip: Make this in a mason jar so you can just grab it and run in the morning.

Blueberry Overnight Oats

Ingredients

1 Cup Certified Gluten Free Rolled Oats

1 Cup Coconut Milk

1/4 Cup Blueberry Purée (I use PEI Berries Pure Blueberry Purée, but you can also mash a 1/4 cup of blueberries)

1/2 Cup Blueberries (Fresh or Frozen)

2 Tbsp Maple Syrups

Optional – Coconut Milk Yogurt

Instructions

Throw everything together in a jar and stir well.

Pop in the fridge and let sit overnight. It will be ready to enjoy in the morning.

I love to top it off with coconut milk yogurt – it adds some awesome, fermented goodness, which is great for your gut health. And it makes it even creamier! Yum alert! You can also add any fruit you like on top. I may have a slight banana obsession, so that’s a typical go to for me.

But, if you have zero time, blueberry overnight oats are great as is. So feel free to run out the door and enjoy them when you have the chance.

    I recently discovered overnight oats and OH MY GOSH have I found my healthy go to. I experiment with different fruits and I also do a version that has 2 tablespoons of chia and a bit more liquid. Hunger is banished and my tummy is happy. Hugs and love from across the world my fellow warrior xxxx
