Hello Lovelies:
I’ve been obsessed with blueberries lately! And who can blame me? Full of phytonutrients, including tons and awesome antioxidants (which are extra good for us thyroid disease warriors). Bursting at the seams with nutrients like vitamins C and K, manganese, copper and fiber. Blueberries offer cardiovascular and vision support, they help promote optimal cognitive benefits and have favourable effects on our blood sugar (source). With all this (and my obsession) in mind, I decided to create a blueberry milkshake. It’s to die for!
I used to make milkshakes with my sister Breanna all the time! Tons of sugary ice cream, more icky processed cookies and chocolate. We would gorge ourselves on them (and Kraft Dinner) and watch the Price is Right. Even though I couldn’t imagine feeding my beautiful body something that unhealthy again, to this day, milkshakes still bring back lovely memories.
So I ALWAYS have cans of organic coconut milk in my fridge. Because, dude, you can make a pretty flipping awesome milkshake in minutes with one of those babies. They’re always marvelous for smoothies, pasta sauces, and, my favourite, whipped cream. Combining it with blueberries and a couple other healthy ingredients turned out to be a godsend! I may or may not be drinking a Blueberry Milkshake as I type this… emphasis on may.
The Ultimate, Healthy Blueberry Milkshake
This recipe is vegan, gluten free, paleo and refined sugar free.
Ingredients
1 Can of Organic Coconut Milk, Refrigerated Overnight
1 Cup of Frozen Blueberries
1 Banana, Fresh or Frozen
1/4 Cup of Maple Syrup
Instructions
Pop all of these ingredients in a blender and blend until smooth. You will end up with a nice, thick milkshake consistency, and a delicious treat that will love you back with all of its healthy goodness.
Who said milkshakes need to be sinful? These are so good, even my cat, Kiwi, loves them (she decided to stick her face in one of them between shots…silly girl.) I hope you adore it too! But maybe with a little more grace than Kiwi.
