Lately I’ve been finding myself closing the window at night and snuggling up in my cozy blankets. It’s made me realize that summer is coming to a close… and while I adore fall, I’m a bit saddened to say goodbye to this warm, relaxing, wonderful time of year. So I’ve decided to cling to summer a bit harder, while I still can. One of my favourite ways to celebrate something is with a delicious treat that satisfies my sweet tooth and supports my health, so I went to the kitchen and got creative!
These Creamy Vanilla Bean Freeze Pops were the delicious outcome!
I started thinking of ways that I could make a healthy freeze pop that satisfied my ice cream infatuation. Looking over the paragraph of ingredients in my old childhood favourites, I knew that I wanted something nutritious, delicious and simple. And so the Vanilla Bean Freeze Pop was born.
These are honestly so easy to make! All you need are some popsicle molds (like this) and these simple ingredients:
1 can of full fat coconut milk (refrigerate overnight)
¼ cup of maple syrup (or honey)
Scrapings of 1 vanilla bean
¼ teaspoon of vanilla extract (I wanted extra vanilla goodness)
A pinch of cinnamon
Wisk all of your ingredients together in a bowl and pour the delicious mixture into your popsicle mold. Freeze until solid and enjoy! This makes 4 wonderful freeze pops to share with your family (or sneak eat so you don’t have to share… don’t worry, I’ll never tell!).
