What Makes Strawberries So Special

Strawberries are bursting at the seems with vitamin C. We’ve got 113% of our daily recommended intake in just 1 cup. What does vitamin C do exactly? Tons of goodness! Check it out:

Antioxidants

Vitamin C’s probably best known for it’s antioxidant ability. Antioxidants are molecules that help to keep certain chemical reactions in the body running smoothly. They perform damage control, preventing free radicals from making a mess of things.

Free radicals are very reactive, volatile molecules that can cause damage to our cells and tissues, including the lenses of our eyes, molecules in our blood stream and even our DNA. That’s kind of a bummer, right? But thankfully vitamin C can help. (source)

Research on the antioxidants found in strawberries even shows evidence that they decrease lipid peroxidation in our blood vessel linings and protect them from damage. Which is pretty wonderful news for your heart. (source)

Collagen Production

I’m pretty sure you’ve heard all about scurvy and know that vitamin C is the answer in preventing that icky illness. But do you know why? This wicked vitamin is needed for our bodies to produce collagen.

Collage is a protein that provides the frame work for our skin and bones, among other things. And it’s kind of a big deal. I mean, without it we would fall apart (seriously!) People with scurvy lose their teeth, bleed easily and have weak bones. But it’s thankfully easy to fix with the right nutrients. Vitamin C is the bomb!

Brain Health

Oh but the goodness doesn’t end there. You love that big beautiful brain in your head right? Of course you do! And vitamin C is needed to make certain neurotransmitters in your gorgeous grey matter. In fact, vitamin C is kind of an important player in seretonin production. This a hormone is involved in the function of your nervous system, endocrine system, immune system, and digestive system. That’s one important job! (source)

Seretonin even plays a role in our moods, our circadian rhythm (including how well we sleep) and even has a part to play in how our bodies react to stress and pain.

Strawberries also bring a fair amount of manganese and fiber to the table and they have a some folate, copper, potassium, magnesium, phosphorus, omega-3 fats, vitamin B6 too. Totally loaded with awesomeness.

More Goodness

If all that wasn’t enough to make you go load up on strawberries, ongoing research is showing that strawberries may help to regulate our blood sugar. And, super bonus, their antioxidant and anti-inflammatory benefits may help to prevent cognitive loss (source). More research is needed of course, but there’s some pretty awesome potential there.

Strawberry Milkshake

Ready to get your strawberry milkshake on? Awesome! But we’re changing the rules here. I’m all about making things delicious and healthy… because, if it’s possible to do both, why would we ever settle for less? So let’s throw away the sugar laden ice cream and forget about artificial flavours. We’re gonna do this right!

Oh wow that sounds completely decadent. I love milkshakes but hate the ones that come with all the extra sugar and fake ingredients. I am for sure going to try this simple 3 (or 2 I think berries are sweet enough) shake recipe out! Yum. I even have the perfect can of coconut milk to do it!!

I’m so happy to hear that Jamie! That’s awesome ^^. I swear – canned coconut milk is an amazing healthy dessert ingredient! Whipped Cream, Ice Cream, Milkshakes, Squares… I think coconuts can pretty do anything haha.
I hope you adore it! Let me know what you think ♡

Absolutely Jackie! I use maple syrup as a sweetener in pretty well all of my recipes. Not only is it local (for me) but it’s less processed than cane sugar and has some beneficial nutrients. 1/4 Cup has 95% of your daily value of manganese, 37% of riboflavin and there’s some zinc, magnessium, calcium and potassium in there too. I prefer to stick with unrefined sweeteners because you get more bang for your buck ?.
I’m so glad you’re excited about the recipe! I hope you adore it ??
