I’m going through a buckwheat pancake phase and I am so excited to share! After finally inventing Gluten Free Buckwheat Pancakes I’m excited about (recipe here) I continued to create and I came up with these adorable, delicious Mini Buckwheat Pancakes. So go ahead and treat yourself to these healthy, guilt-free breaky delights.

One that could have a devastated effect on the environment…
Are you cheese obsessed like I am, but dairy-free? I have been extremely lactose intolerant for most of my life, and have also had a love affair with cheese for as long as I can remember. Not a great mix! But Nutritional Yeast found me and I am hooked. Trust me, you need this beautiful, B Vitamin Complex in your life! Not only can you use it to create Vegan Mac and Cheese (recipe here), you can also make this delicious, vegan cheesy chickpea recipe! Heck yea!

With a couple of simple ingredients you can throw something marvelous together with ease! You just need to get your hands on the right clay.
