Tell us about your health philosophy.

My health philosophy is that you need to listen to your body! Nourish it with food that gives you the energy you need to be the greatest you that you can be!

What’s your favourite part of your health-esteem journey so far?

My favorite part so far would have to be learning about 100’s of new foods! There is such a variety of delicious fruits and vegetables that I have never seen or tried. I enjoy learning how to incorporate them into my diet. I love creating fun healthy dishes, and inspiring others to try them as well.

Why do you think self-love is an important aspect of someone’s health?

In order to even care about being healthy, you HAVE to love yourself. When you love yourself you are going to put yourself first. This means you won’t let your body down. You care way too much about it to not take the utmost care of it, and fuel it with what it deserves. I believe that self-love is a major factor in achieving good health.

What changes were necessary in order to achieve your state of self-love?

I wouldn’t go as far as to say I have achieved this to the fullest extent, just yet. I believe I am a work in progress and that through living a healthy lifestyle, I love myself more and more every day. I feel so much better about my body and how I feel in general.

One morning I woke up and looked at myself in the mirror. I was overweight and miserable. I complained about this for months, without doing anything to make any changes in my life. I realized at that point I was not treating ME the way I deserved to be treated! At that point I decided to change my entire lifestyle. I realized that I love myself way too much to watch my health and body go down the drain. I love myself for making the choice to live a healthy life. I just had to WANT it bad enough!

What inspired you to become the Healthy Foodie you are today?

Oh my, for me I think it was the moment I became a vegan. At that point in my life I felt compelled to share everything I ate. I think because veganism is still so foreign to many people. I wanted to show people all the fun, amazing creative foods I could make using plants. I love the challenge it brings and most importantly I love the feeling of inspiring others to try a plant based meal.

What do you wish you knew before you had made the transition to a vegan diet? Did you feel lost initially?

I don’t think I was lost when I transitioned actually. I think this was the most liberating choice I ever made in my life. For the first time I felt so aware of myself, and my life. I knew that I didn’t know what I was going to eat exactly, but whatever it was, I was so excited to try it. I can honestly say that there is nothing I wish I knew. I did tons of research before fully transitioning. I recommend anyone thinking of transitioning to do their research. Once you have a purpose for your decision, everything else kind of just falls into place. I also think joining social media sites that have like-minded people helps a great deal. Through social media you are able to learn and see what other people are doing. You can get tons of great ideas and incorporate them into your lifestyle.

I love that you make cooking fun! Why do you think it’s so important that people make the time to cook?

Making your food is the safest way to know exactly what you are putting into your body. You have full control over every single ingredient. This is really important because you don’t have to worry about anything unnecessary being in your meal. I also think cooking is really fun. You take a bunch of random ingredients starting with nothing to create something amazing! It’s a meal that you created. I love that part the most!

Describe a typical day on your foodie plate.

Oh boy a typical day, ah that’s tough! My meals vary from huge bowls of fruit covered oatmeal bowls, to rice bowls loaded with veggies and grains. I love beans and I love pasta, honestly I love food haha! I eat such a huge variety of food there is no typical in my life! You might be able to tell based on my instagram account, haha!

What is a daily health ritual must?

First and foremost I start my day off with a huge glass of water. Water is a must for me. It wakes me up and gives me the energy I need to start my day.

I start my mornings off with meditation and reflection. The moment I open my eyes, I lay in bed and go over every single thing I am thankful for in my life. I then go through a list of my goals and things I would like to achieve. I see myself in places I dream of visiting and around people I dream of meeting. I love doing this because in order to have a healthy life you have to have a healthy mind. Taking time in the morning to think positively is so effective.

After that I have a good stretch and workout or go for a nice jog when I have the time.

What advice would you give for someone wishing to make some health invoking changes?

I would say start with one small thing that you wish to try. Master that small thing until it becomes a routine in your life. Once you do this it will be easier to add other small things to your routine. Before you know it you have made all your healthy changes. The most important thing is to start!

What’s your biggest health misconception pet peeve?

I can’t stand when people think that they can drink diet drinks and affect their health or diet in a positive way! I always stress to people that the best thing you can drink is water. Your body prefers that over anything, Diet drinks are filled with so many toxic ingredients that have a negative effect on your health.

What is your favourite health food staple?

Blueberries haha! I LOVE THEM! I keep them by the packs in my house. Blueberries are loaded with antioxidants and are rich in vitamin C! They are an amazing source of fiber, and did I mention they taste delish!!

What’s your go to healthy snack?

My favorite snack would have to be bananas or apple slices with peanut butter. The combo is to die for and so filling. It will definitely satisfy your sweet tooth and keep you full in between meals.

What does Health-Esteem mean to you?

To me Health-Esteem means to love yourself enough to make your health your priority. That is the greatest gift we can give ourselves!

VEGAN LASAGNA

Ingredients

Tofu Ricotta

  • 14 Oz Extra Firm Tofu
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Basil
  • 1 Tsp Parsley
  • 1 Tbsp Salt
  • 2 Tbsp Nutritional Yeast

Instructions

  1. Blend ingredients together in blender or food processor until smooth. Adjust seasonings to taste!

Lasagna

  • Lasagna Noodles – cook according to package
  • 1 Tbsp Olive Oil
  • Vegan Ground Beef (I used Gardien)
  • 1 Small Onion Sliced
  • 2 Tbsp Garlic
  • Spices of Your Choice – I used italian seasoning, salt pepper, garlic & onion powder, basil and parsley
  • Tomato Sauce
  • Vegan Mozzarella and Parmesan Cheese

Instructions

  1. Pre heat oven to 450′. Add olive oil to a pre heated pan. Saute onions and garlic until slightly golden. Add vegan ground and spices. Let cook for 2 minutes.
  2. Add sauce and mix together. Bring to a boil and turn off heat.
  3. In a large casserole dish layer the bottom with sauce mixture. Add a layer of the noodles, then vegan ricotta and sprinkle with vegan parm. Repeat steps until you’ve reached the top of the dish.
  4. Coat last layer with sauce and vegan mozzarella. Sprinkle additional parsley on top.
  5. Bake in oven 35-40 minutes. Enjoy!
