Sometimes less is more, which is why I’m keeping it simple today with these creamy, delicious, easy smoothie recipes!

Smoothies are the best of both worlds, right? On one hand, they’re healthy and full of tons of vitamins, minerals, fiber and amazing phytonutrients. On the other hand, they’re sweet, delicious and can totally sub in for dessert. Basically, the healthy foodie’s dream. At least, if you have a sweet tooth like I do!

I’m a sucker for a good smoothie! I hope you are too, because I’ve got dozens of healthy, easy smoothie recipes waiting for you on this site. But lately I’ve been craving something a little more on the ice cream side. We’re talking cold soft-serve baby!

I love when a few simple ingredients come together to make for a yummy dessert (or breakfast) that totally hits the spot. And it’s all healthy goodness, so we have nothing to feel guilty about.

You can enjoy these right away in a bowl with a spoon or, if you want to be able to scoop them into a dish or cone, place the mixture in a freezer safe container and freeze for around an hour.

Creamy Peanut Butter Smoothie

In my house, peanut butter may very well be it’s own food group… so a creamy, peanut butter soft-serve is, in my mind, one of the best healthy, easy smoothie recipes I can imagine!

And it makes a magnificent breakfast! You’ve got everything you need – healthy fats, protein, carbs… combine this with your overnight oats or add some fruit to the mix and you’ll be ready to start the day.

If you aren’t a huge fan of peanut butter, don’t worry! Cashew or almond butter should work wonders too.

  • 2 Heaping Tbsps Peanut Butter
  • 1 Cup Coconut Milk

Optional Toppings

  • Cacao Nibs
  • Shredded Coconut

Blissful Beet Smoothie

Wait! If you read this title and thought “ew beets” I feel you! I definitely don’t eat enough of these bad boys, because they often literally taste like dirt. But that’s such a shame.

Beets have so much goodness to offer your sexy bod! They have a unique blend of antioxidants, supporting vision health and nerve tissues. Their marvelous phytonutrients help to reduce inflammation. Top that off with awesome fiber that supports your digestive tract and cardiovascular system and you have magic my friends! (source)

And, awesome news, the beets don’t make this smoothie bowl taste like dirt!

This bowl of goodness is basically an upgrade of the last recipe. I wanted to find a yummy way to eat more beets and decided to toss one in to my breakfast smoothie bowl. Blissful Beet Smoothie

  • 2 Frozen Bananas
  • 1 Small/Medium Beet
  • 3 Tbsps Peanut Butter
  • 1 Cup Coconut Milk Or Non-Dairy Milk of Choice

  1. Wash and slice the beet in quarters and toss into the blender with the rest of the ingredients.

  2. Blend and enjoy.

    YUM! I love smoothies so much. Usually I just do fruit smoothies, but now I feel like i should add some peanut butter into the mix ? I’m totally with you on peanut butter being it’s own food group. So yummy. I’m not sure about the beets, but I also never knew how good they are for you. Thanks for sharing this!

      Fruit smoothies are the best! And I find peanut butter often blends in well with most fruit smoothies. I hope you give it a go! It’s such an easy way to get some extra fats and protein into the mix. Plus, yum! So it’s all win really ?. Glad I’m not the only one with a peanut butter problem haha.     Interesting, I’ve never thought about putting beets in a smoothie. It makes a beautiful color thought. I love peanut butter though or almond butter when I’m feeling extra sassy 🙂

I’ve been lactose intolerant since I was little, and it was so hard to find good dairy free options growing up. So I’ve learned to create my own.
