Are you cheese obsessed like I am, but dairy-free? I have been extremely lactose intolerant for most of my life, and have also had a love affair with cheese for as long as I can remember. Not a great mix! But Nutritional Yeast found me and I am hooked. Trust me, you need this beautiful, B Vitamin Complex in your life! Not only can you use it to create Vegan Mac and Cheese (recipe here), you can also make this delicious, vegan cheesy chickpea recipe! Heck yea!

Dairy Free doesn't mean saying goodbye to cheesy flavour! Try this healthy, delicious Vegan Cheesy Chickpea Recipe and enjoy something cheesy but dairy free.

What does this recipe have to offer? The nutritional yeast is a complete protein, containing all of your B Vitamins, which support your metabolism, cell production and growth, as well as red blood cell regeneration, nervous system maintenance and much more. They’re kind of a big deal.

Chickpeas have so much to offer you, including their ability to help improve blood sugar and insulin secretion, lower LDL-cholesterol levels and triglycerides (thus reducing your risk of heart disease) and support digestion. Plus there’s an awesome supply of antioxidants in there waiting for you to devour them!

Vegan Cheesy Chickpea Recipe:

 This recipe is Vegan and Gluten Free. Makes 2 Large Servings (or 4 servings, if you’re using it as a side dish)

Ingredients

1 540ml (19 fl oz) Can of Chickpeas

1/2 Cup of Vegetable Broth (Make your own or try a broth like Imagine Organic Vegetable Broth)

8 Heaping TBSP Nutritional Yeast

1 Tbsp Coconut Flour

2 Tsp Mustard (I use Simply Natural Organic Mustard)

1 Tbsp of Coconut Oil

2 Pinches Himalayan Pink Salt

1/2 Cup Kale, Chopped

1 Lg Carrot, Chopped (I used a red carrot)

1 Parsnip, Spiralized

1 Shallot, Chopped

3 Large Crimini Mushrooms Chopped

Instructions

Prep your veggies, chopping the shallot, kale, carrot and mushrooms. Spiralize the parsnip. You can also chop it if you prefer. Or you can spiralize the carrot as well if you want more spiralized goodness.

In a medium sized sauce pan, bring the broth to a simmer under medium heat.

Open the can of chickpeas and drain out the brine (also known as Aquafaba). Save that brine; you can make tons of good stuff with it, including these Blueberry Banana Buckwheat Pancakes. Add the chickpeas to the saucepan.

Add the nutritional yeast, mustard, salt coconut flour and oil and stir well. Allow to thicken under low heat. Mix in the veggies and let them warm up on the stove top for a few minutes, mixing often.

Remove from heat, serve and enjoy!

Remember, the veggies listed are, of course, delicious suggestions that pair well with this recipe. Feel free to add whatever veggies your heart desires. There are no rules in veggie town!
