I’ve been lactose intolerant for more years than I can count! I used to inhale lactase enzyme pills like candy and eat my fill of cheese, chocolate and ice cream. Those pills eventually began to fail sporadically and I discovered that I thrive on a dairy free diet. While I’ve found alternatives for almost everything (I spend a great deal of time with nut milks, coconut milk ice cream, and dark chocolate) I sometimes find myself pining for cheese.
