I’m a delighted to have the opportunity to share an interview with Jo Harper, the kind, beautiful soul behind Jo’s Food Bites. Scrolling through her wholesome, healthy, homemade meals always leaves me feeling inspired (and hungry).
This lovely lady believes in simple, nutrient dense meals and has a less is more philosophy. Her journey with breast cancer further inspired her to treat her body well and feed it with kindness. And her enthusiasm is marvelously contagious!

Recently I had a revelation of sorts. I need to slow down when I’m cooking and start paying attention. Not because I’m on crazy hyperspeed, but because I’m always winging it… which makes it near impossible to share my dishes! This awesome, Sweet and Sour Miso Veggie Stir Fry is the first product of my new vow to cook more mindfully. Aren’t you proud?
I mean, seriously… there’s a severe lack of main dishes in the Health-Esteem recipe house! And you can give thanks to mindless improvisation. Which is totally fun, and I plan to continue to do… just not 100% of the time (since I love to share with you!)
So I finally slowed things down, grabbed my measuring cups and took notes! Booyah!

Are you cheese obsessed like I am, but dairy-free? I have been extremely lactose intolerant for most of my life, and have also had a love affair with cheese for as long as I can remember. One look at any of her recipes and you just know it’s going to be a delicious adventure. She is dedicated to ensuring that transitioning to a plant based diet doesn’t mean that you need to miss out on your favourite recipes. Her delicious creations are a must try for vegans and non-vegans alike.
Meet the incredible Alethea:
With fall slowly slipping through our fingers it’s time to load up on tons of root veggies, winter squash and all of the goodies that autumn harvest has to offer. I’ve been on a huge carrot binge (thanks to a bountiful harvest) but I think it’s time to move on to other orange friends, like the beautiful sweet potato.
Sweet potatoes have almost twice as much vitamin A as carrots! On top of that you’ve got tons of vitamin C, manganese, copper and lots of B vitamins! These lovely tubers have anti-inflammatory properties, may help to improve blood sugar levels and (my favourite part) they’re freaking delicious! Especially when you bake ’em and stuff ’em with extra yum (foreshadowing!)
And just when we thought things couldn’t get any more awesome, it turns out that eating sweet potatoes with a good fat (like fan favourite avocado) allows you to absorb even more of that awesome fat soluble vitamin A.
With all of this in mind I got to creating! I’m happy to present you with these super yum Stuffed Sweet Potatoes (complete with avocado):

The lovely Kaye Hudson knows exactly what that’s like! This amazing wellness warrior realized that her acting career was no longer fulfilling. She was passionate about health and nutrition and felt a deep desire to pursue those interests and build a new career.
Today she is a graduate of the University of Westminster, London. She has a Bachelors in Biological Science (with honours). Her tenacity has allowed her to achieve her dreams. Her business, Health and Hudson, allows her to design and present nutrition workshops, run boot camps (this amazing woman is also a fitness instructor) and run a nutritional consultancy service.
Kaye’s story will not only inspire you to follow your dreams, it will inspire you to care for your incredible body, treat it with kindness and provide it with the best possible fuel.

Do you have an herb garden? My home is full of green – I have windowsills covered in plants. And amongst all of those green goodies are a few herbs. But I have a confession – I rarely harvest them. I feel like a jerk for hurting my plants. Fruits and veggies we grow outside are fair game; those suckers had to die! But I have a soft spot for my potted plants and those herbs have inherited that gentle love and affection.
Our basil plant all but exploded in leaves. And after months of marveling at it’s insane growth (it practically took over), I finally caved and harvested some leaves. Did I feel like a jerk during? Yes. Was it worth it? Abso-freaking-lutely! It means I got to enjoy an incredible Kale Basil Pesto Pasta! Now I’m staring hungrily at the remaining leaves…

Pre-Graves Disease, my plate was regularly populated by the mundane. I’m not saying that I didn’t experience any flavour – most of it was simply artificial, prepackaged junk. I couldn’t find my way through an herb and spice cabinet if I tried. Let’s say I was vanilla; great friends with salt and pepper, occasional late night tangos with cinnamon… These days I have a fully stocked herb and spice cabinet.
