The Perfect Mini Buckwheat Pancakes

I’m going through a buckwheat pancake phase and I am so excited to share! After finally inventing Gluten Free Buckwheat Pancakes I’m excited about (recipe here) I continued to create and I came up with these adorable, delicious Mini Buckwheat Pancakes. They’re vegetarian (with a simple switch if vegan), gluten free, paleo and refined sugar free… I know that sounds like a lot of “free” but these babies refused to be anything but delicious. So go ahead and treat yourself to these healthy, guilt-free breaky delights.

Mini Buckwheat Pancakes

Creates Approximately 20 Mini Pancakes

This recipe is Vegetarian, Gluten Free, Paleo and Refined Sugar Free. Use egg replacer if vegan.

Ingredients

2 Large Eggs (from happy, local chickens, please) or Egg Replacer like 6 Tbsps of Aquafaba if Vegan

1 cup Buckwheat Flour

2/3 cup Non-Dairy Milk (I use Coconut Milk)

1 Tsp of Vanilla Extract

2 Pinches of Cinnamon

1 Tsp of Maple Sugar (optional, but highly recommended)

1 Tbsp Coconut Oil, for cooking

Instructions

Crack the eggs and place them in a large bowl. Add the remaining ingredients and whip until well blended. The mixture should be very smooth and clump free.

Warm a large frying pan over medium heat. Grease the pan with a tablespoon of coconut oil. When the oil has melted and is covering the pan well, start making your pancakes.

Using a 2 Tablespoons per pancake, scoop out batter and poor onto the pan (you can also make larger pancakes if you wish). Cook until the top begins to bubble (this will take approximately 20 minutes), then flip, cooking the other side for around a minute (until brown).

Remove from heat and, once you have a lovely stack or two, serve with your favourite fruits and pure maple syrup. I went with Dragon Fruit, Persimmon Slices, Blueberries and Nectarcots. I also topped with cinnamon, maple sugar and syrup and hemp hearts. Make them yours and enjoy!
